Product: Make the switch to Shopify's own SEO standard `structured_data`#425

Hi folks! After allowing it to mature, we’re considering making the switch within product pages (and sections that render products like the Featured product section) to Shopify’s more recent SEO standard, which is their Liquid object called structured_data.

This would bring Stiletto to parity with Shopify’s own theme templates, such as Horizon, and possibly stay more up-to-date over time. However, there are some implications of this change that may make you think twice about adopting it:

  1. Shopify will be the one to control the structured data. This means we must trust that they know what’s best for all Shopify stores.
  2. It’s not possible to edit the structured data that Shopify outputs, and if you wanted to make tweaks you’d have to bring it back to a manual structuring.

With that in mind, we’d like to ask for your votes and comments on the topic. Would you like to see the more “hands-off” method of applying structured data to your products? Or would you prefer that leave this as-is, where we have a manual structured data in the code that is very easy to edit?
